I prefer a standard kitchen towel; just cover the oyster leaving the hinge exposed then get your stabilizing hand out of the line of fire while prying.

I'm in the vicinity of places I might find such things, and some particularly clean waters, cleaner than almost any other coastline I've ever been near. But I think I'd find fishing more rewarding. Other than that, I'm so far away from being able to get them diving in fitness let alone comfort with water, and the waters here are a little scary, and there's no sand, so messing that up could be pretty painful.
To be honest I'd rather keep goats and chickens anyway.
