Something I never want to do is guilt tripping people into spending coins.

"Coins needs to spend if we want this economy to grow."

I agree with the general sentiment here, but I disagree with the approach. Consumers shouldn't be begged to consume. Producers should become worthy. You are not necessarily worthy just because you accept to be paid in coins for your product.

And on a more personal note, I don't sell beef at competitive prices. I sell luxury. Nobody ought to buy luxury under the pretense that he should encourage the Bitcoin economy.

You will never see me engage in this rethoric that encourage people to spend for the sake of growing the economy. You should spend if the product is good and create value for you.

If they can spend fiat they can spend Bitcoin.

Either they need to demand the people they consume from accept Bitcoin, or support the Bitcoin alternatives.

But yes, I agree with your point that Bitcoiners should provide good services, so far I'd say they're on par, if not better than their Fiat alternatives.

But everyone has their own preferences, I suppose.

A better money will always influence people to spend it less. This is an intentional design aspect of fiat, it loses value intentionally to influence spending. I think Leathermint puts it well here.
