SimpleX over Tor seems to me like top notch security. With a self hosted SimpleX server that is For only, you of course require your communications partner to also use Tor
SimpleX recently got the private routing feature which sends out messages over your trusted inbound SMP server. That way you won't ever connect to any servers except the one inbound relay your can set to a trusted one.
If you assume with XMPP that both users are using Tor, than I would say if both users on a SimpleX chat are using Tor with random SMP servers, it's just as secure.
No information can be gained by the SMP servers except that there are messages going out from one queue and that's it.
SMP Servers only ever get to see one side of the communication, never the reply. Add to this the absence of user accounts, you cannot build a social graph and tracking by IP does not work if both sides use Tor.
Interested in your thoughts, but SimpleX over Tor is a much lower barrier to entry than both sender and receiver having to anonymously host a XMPP server behind Tor.

Ich glaube SimpleX.chat ist eine gute Lösung. Einfach in der Handhabe als Instant Messenger und man kann Server selber hosten, oder auf Community Server zurückgreifen für den Fall, dass SimpleX als Firma gezwungen wird, alle Server für EU Nutzer zu sperren. App als .APK runterladen, dann kann man auf seinen Servern auch weiter schreiben, wenn SimpleX die App aus dem Play Store nehmen muss.
Ähnlich optimistisch bin ich bei XMPP oder Matrix: Ist die App einmal installiert und ein eigener Server ausgewählt, kann weder die EU noch der App-Entwickler einen davon abhalten sicher zu chatten.
SimpleX ist nur am einfachsten einzurichten und verbirgt Metadaten am besten.
Zentrale Messenger wie Threema, Signal und WhatsApp können einfacher dazu gezwungen werden EU Nutzer auszusperren, wenn keine Hintertür implementiert wird.

You are not answering the question. If you argue that Google has a backdoor to all mobile phones than no messenger is safe to use.
SimpleX Ltd clearly state that they do not store IP addresses. Don't trust them? Use Tor, a VPN or both. By the way you can enable private routing which routes your outgoing messages over your inbound relay which you can self host and trust. That way your device NEVER CONNECTS TO A SERVER YOU DONT CONTROLL.

What metadata does the recipient relay server get then?
For most messengers I would agree but Simplex is designed in a different way.
Don't trust a relay you don't run yourself? Don't connect to it. You can chat using Simplex without ever connecting to a Server not run by you.
And if you do want to connect to your recipient's relay, just use Tor and there is no evidence of where the message came from.
I don't find the funding of VillageGlobal for Simplex concerning. The founder clearly said that VG does not make any operational decisions and they are just an investor. Simplex has had plans on how to monetize corporate clients from the early days and that's what VG is interested in. Returns from that business model.
Besides that: Simplex is open source and you can host your own servers, that way nobody at simplex even knows you use their app and can't get any data from you.
