For long-form podcasts, do you prefer when pauses and filler words (um, like, etc) are edited out, or do you prefer the conversation completely unedited?

Leave the pauses in, if anything only edit out awkward mouth noises and replace with room tone.
Other mixing considerations:
- De-ess both guests. Nothing will make me turn off a podcast faster than harsh sybilance
- Match overall loudness of both host and guest using EQ/compression.
- Consider editing out or automating background noise with gates.
This should work really well with the SM7b's capsule, solid choice!
Consider a shotgun mic with a similar wind sock if this doesn't net the result you're after.
