As a Brit, I think we all have a natural accurate use of 2 fingers in a vertical manner sir. I practiced by working with a French company for 5 years to perfect technique but there was a large element of natural timing instinct

Picaña. Sear fat side down for 2-3 minutes. Don’t fear the flames (cooked on charcoal). Then turn and sear 2 mins fat side up. Move for offset heat and close grill. Timing depends on size so use thermometer. Move every 15 minutes so not getting uneven heat if close to coals. I wait till 160F/70C to remove and let stand 5 mins before cutting. Going slow and putting offset heat with fat side up allows fat to render and soak in.
I do like Liszt. Goes well with a little Chopin and Debussy but she’s playing at 3 times speed! It’s very cool. Enough that I showed it to the missus. Only comment made was “wow, she managed that without having a stroke!” 🤷
