Don't conflate all employers with some. Many major chains do this, but most mom + pop sized restaurants have razor thin margins ... maybe a happy medium would be based on revenue/profit, like if your restaurant is making over 100k/year, all of your staff need to be paid at least minimum wage.
But really, the countries that accept tips also have an atrocious non-livable minimum wage that doesn't match the inflation from their endless money printing / central bank relationship, but that's for another day :D
I would agree philosophically, but in countries that take tips, employers are usually allowed to pay their staff lower than minimum wage, thus allowing the workers to not declare that tip income, getting them closer to a livable income they would not have with just minimum wage rates -- so would require Denmark like restaurant wages, thus Denmark like restaurant prices, to be sustainable, without tips.
