When the people of a society are culturally and biologically 90+% similar, as Americans were in my youth, their values and moral behavior are also very similar, so they trust each other not to bring bombs into airliners or concerts, or put poison into children's Halloween candy or juice bottles at the grocery store -- and that trust is amply justified. Your perplexity is understandable, since it is indeed hard to believe that Jews tell the truth from time to time. But they do. And, for thousands of years at least (read their own writings in the so-called "Old Testament") they have set themselves up as a hyper-privileged, extremely powerful, yet supposedly "persecuted" minority in whatever country they have penetrated, uniquely privileged to control the country's leaders, to continually shave off a percentage of the people's wealth, and to commit bloody atrocities with impunity -- while simultaneously making it a life-ruining "crime" to even mildly criticize them.
