About old coins, you can fix a point in time before the blockchain was compromised, and everyone can agree to take that as is and use it as new genesis block for the SHA512 upgrade and start hashing again.
Same PoW, same difficulty adjustment, same validation criteria, same rewards and same fees mechanism.
Now it would be yes. But if it becomes clear that an encryption upgrade is needed, everyone would upgrade together.

We can just upgrade to SHA512, and when that becomes too easy, some 500 years from now, we can increase the length of the message digest.
