Do you really believe in that? I ask humbly because I don't know if I should. If they do have root on every phone why should we care about anything at all? Or maybe if we at least used something other than their central server that would at least make their lives harder.

You can't protect against the NSA. But you can protect against the telecom company, the messenger company, and whoever else could have access to the data.
