so, i learned my local barman/grocer/butcher/hustler guy migrated to madeira from sarth efrika circa 1998

in 2006 or so i had a job on some government program working for some health insurance service Teacher's Union Health and i was assigned to this white south african guy, and his daughter, who was a massive GITS and Tool fan, told me lots of things about life in south africa for white people in around this time

so he says south african, and i instantly get a picture of why he left

the daughter told me about how her mother kept a derringer in her garter and her dad slept with a revolver next to his bed

and on other notes, i also had been seeing this odd looking greasy stuff that my mate the barman is often cooking up to serve

i was like, this is way too greasy to be normal meat... it looks like either pate or liver

yes, it is goat liver

and i talked to him about how in Serbia they love to eat liver, and even the name of liver in portuguese has a similar lilt as the serbian word djigeritsa... but he said - yeah, you don't fry it, you boil it, it's awful fried

100% do not fry liver... boil it whole, and then dice it up

it looks like plastic, almost... and it's quite palateable, but the best part is none of the fats are oxidised

on further other notes, i told him that i would buy gallons of goat dripping if he could get it for me... so, after my supply of cacao butter runs out i'm gonna be on a diet of goat fat

i love the smell, the caprylates have a specific smell, and every time i am out walking and i smell it i know there is a goat dairy nearby, the male goats reek of this smell and most of the meat is actually young male goats anyway, so not surprising it's their grease

i love the smell... did i mention that? not like i want to procreate with the animal more that it's got this energy... it's one of the nicest smelling musks i know of, and when you eat a lot of goat fat, you smell like a young goat, and i am pretty sure that is hot
