What's the point of following a hashtag, and how does one unfollow the hashtag

You can follow topics additional to people so you see notes in your feed from people you didn't follow but that post about a topic.
When you enter a hashtag amethyst asks to search for a hashtag and you can follow/unfollow there.
Follow a hash tag if you want to see posts that have that hash tag.
Search for the hashtag again and then click unfollow.
