Yes fedimint is much more alike with liquid in terms of the multisig security measures. Of course fedimint multisig quorums can vary, and your exposure to a mint should reflect your risk tolerance, balanced with how much you trust the key holders/mint operators.
I would agree with your thoughts around cashu as well. Best for smaller trusted communities. This is assuming a user has actually vetted the mint they are using - which I'm unsure how one would best do that given the early stage things are at. Over time some mints may become more trustworthy just by virtue of their track record.
I figure as long as people are aware of what these tools do, they will need to use their own best judgement as to which (if any) are suitable for them.
