rpi with waterproof case and a weatherproof webcam and a little webserver you dial out to for the stream
I've wondered about that too, but when we use game cams, we never place them where the house is visible on camera.
Less worried about the house and more worried about a potential attacker using it to track my habits and either steal animals when they know I'm away or the house when I'm with the animals or something similar.
I think there are ways to use your own servers/connections that would prevent this, but its beyond my tech abilities.
Put your cameras on a VLAN and block their internet access with firewall rules. You can let them resolve DNS and they will usually quiet down a bit.
There is 0 chance my wifi reaches to my back 40, so I have to use cellular data. So I need the camera to encrypt the data before sending.
I mean its probably not cost effective to protect the privacy of your critters, but Unifi makes some incredible network extension gear:

Ethernet limit is about 100m. so maybe you could also just run a cable and put up a POE access point ..

Still interested in other answers though. Can you purchase cameras for your property where the CCP isn't watching you like you're in the Truman Show? I mean, do they exist?
