just stock Ubuntu. I like playing around with linux but this machine needs to work and never break

Exact same setup here. Framework on Ubuntu. Don't forget to install the OEM kernel recommended on the Framework site, makes a difference, provides the proper drivers for everything.
Do you have a link to that recommendation? I cant seem to find it on their site
