Got to talking about pork with some people and now I’m thinking back to when I was a kid and the family would go over to my uncle’s place every fall and butcher a hog my grandfather’s buddy raised for us. I can still see them hanging on from a tree on a hook behind his back door to drain. We’d get to a year. One to butcher in the fall and one to barbecue on the 4th of July.
