Yes, but slowly.

Same: takes a day to make 2 gallons. Important enough I can delegate it to someone within the household.

In the process of securing ground water, might fuck around with filtration first.
Not sure if this works but I have seen large porous sedimentary rock bowls that function as water filters. May or may not 100% work. Haven't looked into this too much. Saw it on a tik tok or something.
If things get weird you might want the piece of mind of going to 0PPM before remineralizing. War things.
