The only (subjective) way to generate some truth is by direct experience yourself. It's perfectly OK if plants apear to be toxic. For you.

If we start generalizing our truth for others we are falling for an ideology.

You can’t dispute the fact that plants contain various levels of oxalates, lectins and dozens (sometimes more) of carcinogenic natural pesticides. You also cannot argue that these compounds are anything other than toxic to humans. These are objective measurable facts.

There are varying degrees of sensitivities to these compounds within individuals but they are toxins no matter how well some tolerate them.

If you refuse to accept these measurable objective realities you’re just being delusional.
