To be fair they did offer to go (and I got some), but where's the cutoff?

45 mins is enough time to clear security for domestic flight.

when I worked in food service (15-19 yo) in ancient times, we sat people until closing time expecting 20 min from close for last food ticket and least another hour on the floor. We pre-closed during this time (shut down and cleaned the kitchen and all unused tables). It was expected and we had no problem with it.
