I'll use this opportunity to ask... Does grapheneOS support eSim like calyx does?

GrapheneOS does indeed support eSIM however as we don't include and enable any Google services by default as Calyx does (eSIM being one) you just need to install sandboxed Play Services in the owner profile to enable the eSIM management settings.
