It is great that we could talk about miso in nostr.

Miso is a fermented bean paste used for miso soup and other recipes.

There are different kinds of miso. Red miso, white miso, haccho miso, wheat miso etc. I grew up in a white miso area but my mother used only red miso as my grandmother did. So I am a red miso eater. Macrobiotic diet uses wheat miso, which, I think, is tasty too.

Typical soy (or other bean) miso is made of three ingredients.

Salt

When I buy soy bean miso at store. I usually buy one that has only three ingredients and organic. A lot of miso contain other ingredients. I like this brand among what I can get in the United States (but probably there are other good ones that I don’t know of).

I have miso, bought three kinds two years ago. We don't use it much, czech kitchen is more about other tastes.

But can it spoil? I ferment and thought it's very salty, and it behaves like it. One year, jar long opened in a fridge, it's exactly the same I think.

The date on the glass is very innacurate, am I right? Or can it develop something nasty without me noticing?

Hi Bäretta! It makes me smile that miso jars are sitting in the fridge in Chech.

Can miso go bad? I don't know. It is fermented, So it is spoiled already in a sense. I never heard miso went bad. But it does have an expiration date.

Miso can be fermented for 3 years in a air-tight jar in a shelf. But it can be molded (but mold can scraped off and the rest is fine). But if it is mixed with air and other food, it may go bad, I imagine. My friend actually put miso in the freezer. She said it would not be frozen and stayed as it is.

Unfortunately, I cannot say if your miso is fine for sure, But if it tastes the same, probably it is ok.

A small amount of miso can be added to dressing too.

I love it in ramen, of course.🤤

I looked up whether miso can go bad. According to this miso company, "miso can mature but never spoil" (I guess if it is not mixed with other food)."

"miso can change color or taste. if that happens, you can mixed with other miso and use it"
