Not sure why my umbrel is now stuck very often so my node runs out of synch... and I need to restart..... first I thought it was related to high volume from larger blocks full of inscriptions but now it seems it's not the case as blocks are not that heavy.....

What do you mean?
Your service provider might be throttling your WiFi service based on your use. If you have a centralised provider like AT&T or any public utilities company this can be a problem. Happens a lot with cell phone providers as well. Log into it it with ssh and check some basic things like disk space, CPU usage, swap space, memory
Also docker logs of your Bitcoin container will give clues
Do you have mempool installed? I had the same issue for months until I removed mempool from my node and just reference .space as needed instead. no issues whatsoever since removing mempool app from umbrel.
Rpi4 with 1tb Samsung for reference.
