Yes that would be great! I don't really care to see the tourist areas. I want to dine and explore where the locals prefer to hang out.

Yes this is what I always do. And special in Thailand where it is safe you can do this even in a big city as Bangkok.
And now after the 8 times in Bangkok I still explore new places. I even told the condo owner about a nice temple with Buddhism art he did not know about and thanked me because he went there 🙏 🇹🇭
