There are various formats it can handle, just scan the xpub QR with the main camera and you’ll get redirected to the account import page.
We don’t use Electrum backends, we use Neutrino block filters. You can point to your own Bitcoin node for the filters.

Then add you node to the peers list in embedded node settings
Will I have to change from bitcoin.node=bitcoind to bitcoin.node=neutrino in lnd.conf on my embedded node? Could it somehow affect the current state of the node?
No the instructions above are for serving up filters. For the embedded node just add your remote node to the neutrino peers list
