Do these so called "Privacy" concerned Android custom roms are really concerned about our privacy ?

I’m also a newb in this but what I have seen from Graphene OS I would say yes!
But it still depends on you what apps and services you use.
By apps and services you mean not using Google Services.
Am I right ?
