Colorful lunch! Forgot to post it at lunchtime…
Green coconut Thai curry
Pink pineapple
Yellow bell pepper
Purple eggplant
Dark meat chicken
White basmati rice
It’s nice and my best Thai curry yet, but still not as good as my Indian curry or Thai curries from (good) restaurants 🤔
This time, I not only used coconut cream, but only the creamy top of the can of coconut cream — the clearer liquid at the bottom went to make rice along with some bone broth. But the curry was STILL not as thick and creamy as I feel it should be. Wonder what I can improve 🤔
Possibly part of the problem is I’m a little afraid to reduce the sauce once the coconut is added. In the past, heat has seemed to destroy its flavor… but I can’t figure how else the better restaurants are getting their curries thicker.
