Do you know what this is. I did grow it myself, it is not saffron but you use it a lot like saffron, and it also starts with an S.

Saffauxron probably.
Safflower, good substitute for saffron. Also a great bird attractor. I’ve shot hundreds of doves over safflower fields irrigated by canals stemming from the Colorado River in the desert southwest.
