So wait, Zeus (the company) is taking the BTC and then using Square to push USD to the merchant? How can Zeus do this? I'm confused

Zeus is just management node LN wallet.

That's the beauty of it.

You just send orders to the node.

I don't think that's what's happening. Zeus just acts as the payment processor for customers that want to pay in Bitcoin. Square is just doing the inventory and sales tracking.
