Not sure compared to air drying. if it is similiar to dehydrating, freeze drying preserve much more of the original qualities. This includes taste, smell and nutrients.

I guess what I was meaning was after dehydrating/air drying the end product is just dried out and possibly a little more brown in color depending upon material.

It seems silly to ask but is it similar texture/result with freeze drying?

Freeze drying comes out with more color and seems more brittle to the touch.

Sounds perfect for making into tea bags.
