Just started gathering some wild oregano. But very few is ready. I think next week i will start to gather regularly.

Nice question to the point 👍. The answer is when it has bloomed approximately at 80%. Practically when it starts to bloom. Now most it has not bloomed yet, but soon it will. Those in the photo had bloomed earlier than the others.
