The default relay is relay.nsec.app but if you want you can change it or add more relays as a fallback when the relay is not working.
You can change the relays only before the first connection.

When using Amethyst, it asked to log in with Amber, chose to do so, but neither app asks you to put any relay information the relay section of Amber. It is unclear for a user what the relay section in Amber is used for.

The relays are used just for applications that uses nip 46 (nostr connect or bunker)

For now I think only web apps like noStrudel, coracle, etc are using nip 46.
If you are not planning on using web apps in your phone you can download the offline version of amber
