What das Stablecoin Transaction mean? Exchanging Stablecoin for Bitcoin and any Shitcoins and vice versa?

This chart could be misleading. When I saw the chart I thought it tells me that more people paid with Stablecoin then with VISA. And this case, I cannot imagine.
