Why would anyone want to use Taproot assets over Lightning, when a better alternative exists via Liquid that has low transfer fees, fast settlement, supports confidentiality and the user holds their own keys?

First off, the user doesn't hold their own keys. Similar to fedimint, liquid is a multi-sig between a bunch of companies.
