You need to press the recovery button multiple times

I understand you are recovering your balance from seed (with mint assistance). Ecash is recoverable that way thanks to sequencer, and wallet needs to try from beginning as nobody knows which indexes belongs to not yet spent balance.

So mint returns re-created ecash and wallet then tests which of tokens are unspent. With longer wallet history unspent ecash is further away.

There is than wallet backup feature that works differently - you can export exact state of your mints and ecash - easier e.g. when moving to new device, because you do not need to play hide and seek with the mint.
