Adoption is a very good thing. I pay for lots of things in Bitcoin and preferably Monero (including my website hosting, domains, and so on), and have done so for well over a decade now. Like, why wouldn't a business accept all major forms of currency possible? You can easily convert it to the one(s) you prefer. V4V is the way.

Which Monero wallet do you recommend? I have a server, any wallet I can spin up on my own?

You can use the Monero GUI or command-line wallet to run your own node. For mobile, I like Cake Wallet—it lets you connect to your own node, do KYC-free swaps, and hold multiple cryptocurrencies in one app.

Ok, I’ll check out Monero GUI first and will see for mobile. I’m not super excited about mobile wallet apps

I do think that Featherwallet is much more polished than the GUI.
