So what would it mean to own them? I'm open to changing my mind here, but I still don't understand what your definition is.

Okay so only Netflix can own them. And actually they are just leasing those movies from other production companies. Netflix made content is owned by them and they let you pay for a license to view those movies. They are never given to you. Same with Spotify. They give you a license to listen to those songs.
