Honest question. I hear some people say Strike isn’t a good wallet but I find it the easiest to on board and easiest to understand. Is the problem not being self custody?

I personally wouldn't use Strike as a wallet. It's more of an on-ramp solution for buying bitcoin and making payments. Something very high like 90% of Strike customers withdraw to their own wallets.
Gotcha. Keep small amounts for payments but always self custody in cold storage. That’s what I’ve done since forever.
