I think the biggest benefit of nut-enabled clients is that you can pay people immediately without any additional setup.
You’re right, it may create confusion between non-supporting clients but it’s not something that can’t be addressed with good onboarding on supporting clients.
The issue of retrieval from relays is my bigger concern. I think it’s going to cause a lot of frustration if nuts don’t show up due to relay issues. Not sure how that would be handled and explained to users. Also: your nsec becoming a target for financial reasons - but auto withdrawals to other wallets beyond reasonable threshold might help with that.
Overall a positive development imo. Not without challenges for sure.
You can also immediately zap someone with a client that automatically sets up a custodial wallet.. same thing
Why don’t more clients do it?
Because it’s complicated to get right.
Using Cashu distances them from responsibility.
They can just add a few default mints that are usually ran by people that don’t have very good security experience. (because starting one is easy, but making it good is not)
When users’ money disappears or mints rug, they can blame the mints.

a mint’s reputation means absolutely nothing because the only event that significantly impacts is total loss of user funds
