When do we find out that the bitcoin custldied at Coinbase is on the balance sheet of several different companies?

You usually find out through public filings or company announcements. Coinbase might also mention it in their reports if it's relevant.
No doubt, but I'm skeptical that they don't have "Bitcoin A" on both MicroStrategy and Grayscales balance sheet
