You can lay this plastic fencing on the ground of the garden. They wont shit there because it makes it dificult to scratch the ground. Or a pellet gun works also.
Wouldn't that hamper a plant's growth? I'm not opposed to doing something like that if it works, though.

You put it like in between the rows of plants. Not over the plants.
My mother used it in her rose garden. Helped.
Well, if these repellent pellet things don't work, that might be my next step.
