I asked a similar question and got some pretty good answers. I will have to look for it and I'll tag you.
As for the using Nostr over Meshtastic, I'd give this a whirl:

This does require the node doing the actual "Nostr" part to be connected to MQTT
It's a PoC as they mention in the readme.
