I realized I'm hungry and didn't have breakfast when I saw this. This looks really tasty. It somewhat reminds me of a cake my wife likes from WholeFoods called Berry Chantilly Cake. You should look it up if you've never heard of it. I'm sure there's recipes out their on how to recreate it. I think you'd be able to do it for sure. Have a great day friend.
