What’s for dinner? It’s a super spicy red lentil, tomato, eggplant, potato, carrot, celery and onion (plus garlic) stew for us. A little crumbled cheese on top. Eaten on a pillow. 😆

Everything except the eggplant in that list sounds amazing!

eggplant and potato sautéed in olive oil! it adds a lot of depth! I usually make this as a soup without the carrots, eggplant and potatoes.

Eggplants are on my list of 5 no-nos.

I'm sure you love it. I just can't... Ugh.

I didn’t like it till I married someone for whom eggplant is a staple in his diet. The key is salting the peeled and sliced eggplant to leach out the bitterness before cooking.
