One other question - I don’t want to store any data about users. Are there any sanctions I have to worry about? Do I have to check if a users ip address is from North Korea, Iran, etc?

yeah, that's up to you, but if you want to stay *well* within the confines of the law, you would need to check whether an IP is coming from those countries
that's up to you and your risk tolerance 😉
I, for one, wouldn't block someone from, say Venezuela, from using my products
by the way, I'm definitely not a lawyer, I just happen to have interacted with too many wrt using bitcoin within a large bitcoin US-based business
