Chicken Broth

A basic recipe to make 🐓 broth:
Ingredients:
- 1 whole chicken (around 3-4 pounds)
- 8 cups water
- 2 slices ginger
- 4 green onions, cut into large pieces
- 2 cloves garlic, smashed
- 2 dried shiitake mushrooms (optional)
- 1 teaspoon salt, or to taste
Instructions:
1. Clean the chicken: Remove any excess fat or giblets from the chicken cavity. Rinse the chicken under cold water and pat it dry with paper towels.
2. Blanch the chicken: Fill a large pot with enough water to submerge the chicken completely. Bring the water to a boil. Carefully lower the chicken into the boiling water, breast-side down. Blanch the chicken for about 2 minutes to remove any impurities. Remove the chicken from the pot and rinse it under cold water again. Set aside.
3. Prepare the broth: In a clean pot, add 8 cups of water. Bring it to a boil over high heat.
4. Add the chicken and aromatics: Once the water is boiling, carefully place the blanched chicken into the pot. Add the ginger, green onions, garlic, and dried shiitake mushrooms (if using). The aromatics will add flavor to the broth.
5. Simmer the broth: Reduce the heat to low, partially cover the pot, and let the broth simmer gently for about 1.5 to 2 hours. Skim off any impurities or foam that rise to the surface.
6. Season the broth: After simmering, remove the chicken from the broth and set it aside. Taste the broth and season with salt according to your preference. Adjust the seasoning as needed.
7. Strain the broth: Using a fine-mesh sieve or a cheesecloth-lined colander, strain the broth to remove any solids, such as the ginger, green onions, garlic, and mushrooms.
8. Shred the chicken: Once the chicken has cooled slightly, remove the skin and shred the meat into bite-sized pieces. The shredded chicken can be used for various dishes or added back into the broth.
9. Serve the broth: The Chinese chicken broth is now ready to be used in your desired recipes. It serves as a delicious base for soups, noodle dishes, or even as a comforting broth on its own.
Note: You can store the broth in the refrigerator for up to 3 days or freeze it for longer storage. Just make sure to cool it down before storing it in airtight containers.
