We get baby swiss from the Amish from the interior of Michigan, same kind of thing?

Hmm. Baby swiss seems drier and harder than this but maybe. Have you ever had Queso Fresco, Mexican cheese? What we get here is basically Cottage Cheese that has the whey squeezed out.
