If you gift someone ecash and they lose the string, the sats aren't lost, which is a pretty sweet way for the network to stop losing coins.

What exactly happens? Wouldn’t they show as pending withdrawal, maybe until I Lightning out of the mint and back in?

It just stays in the mints node, for them to keep

The mint’s node can reclaim the sats by closing the channels, I assume. And the sender can also revoke the token by claiming it themself.

Oh and duh, I could redeem them if they aren’t available for ln withdrawal

It’s like sending the string but not locking the string to another private key, so if the other person doesn’t add the sats to their wallet, it just stays in your wallet
