Storing all the seeds would cost almost nothing. Just add a new field to the user data base next to your email and phone number. Done.

Yes... mmmm... not sure given the "storage quality" (in three parts) offered. even if I am not for this service, I remain convinced that my ledger remains safe with me and the sentence hidden by me. and also any services of this kind can sniff user data without telling anyone and without exposing themselves
I don’t want to convince you. You do you. But i don’t trust ledger anymore.
And no, not any service can sniff your data. If a software is opensource, it is verifiable. Ledger is not open source, so you can never be 100% sure.
