Anybody know if you do daily buys of saying $10, and after 100 days you send that from the exchange to your wallet ($1,000), is that 1 UTXO or 100? It’s not real Bitcoin unless it gets sent so, it would be 1 UTXO?

Its best too. If really don't plan on spending yes. You can always manage utxo's in your wallet at any time. You can join some make more whatever you want
