Thank you very much for your kind comment, and I apologize for the belated reply. I will just explain this concept to you in this reply. It is fairly simple to understand. Upon digestion of gluten, which is the main wheat protein, special polypeptides (just smaller proteins) are released. These proteins are called exorphins, and they cross the blood-brain barrier and bind to opioid receptors. Every time you eat bread, you get a mild euphoric effect, similar to the effects of endorphins after a workout.

There's even some studies suggesting this might exacerbate the condition of schizophrenic patients, but I haven't verified these particular studies.
