Pretty much everything.
Bitcoin node, lightning node, other bitcoin related shit, invoicing platform, time tracking platform, uptime platform, a couple metrics platforms (web and graphana), picture hosting, various random tools, Git server, CAPTCHA server, SEO tools, caldav server, File syncing, various nostr relays, zap servers, public file servers, and private file servers. Media servers, recipe servers, audiobook servers, plus various applications related to my business, rss feed.
There's definitely more that I'm missing. I have like 50 plus things I'm tracking on my uptime platform and I use them all. Lol.

What is your setup like? I just have a Start9 and know I can’t do some of this due to closed source vs open source stuff.
I have openmediavault on raspberry pi 4 and running things as docker images there, and on intel nuc i have umbrel with bitcoin stuff and for miner i have Braiins BMM100

Docker made it quite easy to host on my home server.
Also I've had a lot of devices rooted with cloud services disabled (Robot Vacuum, cameras...)
I will add self-hosted GPT whenever I get decent GPU for a good price.
